La galette du Shangri-La Paris

With January comes the time to taste the traditional "Galette des rois" (pastry tart filled with frangipane). The official day to eat the galette is January 6th (marking the Epiphany on the Twelfth Night) right? But being fond of these patisseries, I can never wait until that day to find out the best galettes in town.

In 2019, one of the best galettes is definitely the one created by Michaël Bartocetti, Shangri-La Paris Chef Patissier. It's got everything one can expect in a "Galette des rois": a crusty caramelized laminated dough filled with a gorgeous vanilla frangipane cream and on top of it, caramelized almonds. I just loved it. 

And the lucky charm (fève) is so cute: it's a golden flower of Bauhinia, the emblem of the Kong Kong flag, reminding the origins of the Parisian Palace.
